Taco Rice

1 Pound Ground Beef
1/2 Cup Chopped Onion
1 Package Taco Seasoning
1 1/2 Cup Cold Water
1 1/2 Cups Zucchini Thin Sliced
1 Cup Frozen Corn
1 Can Tomatoes
1 1/2 Cups Uncooked Instant Rice
1 Cup Shredded Cheddar Cheese
1 Teaspoon Chili Powder [optional]
1/8 Cup Sliced Canned Jalapenos [optional]

Cooking Directions:
In a large non stick skillet brown ground beef and onions, Drain off and stir in remaining ingredient's except rice and cheese. Bring to a boil then stir in rice. Reduce heat to a low simmer cover and cook 7 minutes. most liquid will be absorbed stirring occasionally. Remove from heat. Fluff with fork and sprinkle with cheese and recover. Let stand 3-5 minutes until cheese is melted. Garnish with tomatoes and cilantro. Serve dish with warm tortillas or fresh corn bread.
